Well…had an Oops! moment yesterday and completely deleted my original post for tonight. Unfortunately, I did not write down the recipe which leaves me no choice but to redo the dish and write it down as I cook.
BUT NEVER FEAR!!
I’ve had this one in the arsenal for a later date but now is as good of a time as any, I suppose! In coordination with Tasty Tuesday, we’re keeping it high protein and healthy today with a very quick and simple dish that any salmon lover is sure to enjoy! So let’s get to it!!!
Ingredients (serves 4)
- 4 skin-on salmon filets
- 1 pink lemon – regular lemons work fine as well
- 1 tbs fresh or dried parsley
- 5 tbs grapeseed oil
- 3 tsp garlic powder
- 1 cup quinoa
- Old Bay herb & garlic seasoning
- salt & pepper
Directions
- Rinse salmon. Place on a cutting board and using a paper towel, pat the filets to absorb excess moisture. Set aside.
- In a 2qt pan, bring 2 cups of water and quinoa to a boil. Reduce heat, cover and let simmer for about 20 minutes (stirring occasionally) until water is absorbed. Remove from heat.
- While the quinoa cooks, let’s prep our salmon! Now that you’ve completed step 1, it’s time for seasoning. Sprinkle with salt, pepper and herb & garlic seasoning.
- Once the quinoa is done, heat up 3 tbs grapeseed oil in a shallow pan on medium high heat for 3 – 4 minutes.
- Place salmon in the oil skin side down and gently press down on the filets with a spatula to ensure the skin fries well and doesn’t stick to the pan. Cook for 3 minutes. Gently flip the filets and press down again. Cook for 4 minutes.
- While the salmon cooks, squeeze the juice from half a lemon into the quinoa. Add remaining 2 tbs grapeseed oil, garlic powder & parsley. Mix well. Taste and add salt & pepper as desired.
- Place 1/2 cup of quinoa on a plate & top with salmon filet. Using the remaining half of the lemon, cut into thin slices and place 2-3 on top of each filet. Top with parsley if desired.
