Who doesn’t love enchiladas???

Like…seriously, who doesn’t??

Enchiladas are a weekly staple in my household. Whether they’re made with chicken, shrimp, pork or beef they are delicious and usually make a large batch so I’m able to enjoy them for a few days throughout the week for lunches.

Today I’m going to walk you through how to make enchiladas with ground beef. You want to use the leanest ground beef (or ground sirloin) you can find. I generally use 95/5 or 93/7 depending on what’s available at my neighborhood grocery store.

Beef Enchiladas

Ingredients 

  • 1 lb ground beef
  • 1 tsp black pepper
  • 1 small onion, diced
  • 4oz green chilies, diced 
  • 2 tbs taco seasoning (about 1/2 pkg)
  • Whole wheat soft taco size tortillas (8-10)
  • 10oz green chile enchilada sauce 
  • 1 1/2 cups shredded cheese 

Directions

  1. Place ground beef, onions and black pepper in a skillet.
  2. Once halfway browned, add diced green chilies. Should look like this when adding…
  3. Once fully cooked, turn the burner on medium low and add taco seasoning. Mix well and cover for 5 minutes. 
  4. While the meat simmers, turn the oven to 350Β°. 
  5. Lightly spray a large baking dish with cooking spray. Place a few large spoonfuls of the enchilada sauce into the dish and move it around to coat the bottom.
  6. Now that the meat is ready it’s time to assemble the enchiladas! On each tortilla, spoon about 1/4 cup of the ground beef, sprinkle some cheese on top, roll it and place it in the dish. Repeat until all meat is gone.
  7. Take the remaining enchilada sauce and pour over the enchiladas in the pan. Use the remaining cheese and sprinkle on top.
  8. Cover with aluminum foil and bake for about 20-25 minutes or until sauce is bubbling. 
  9. Remove from oven and let cool 5 minutes. Serve with a dollop of sour cream & fresh chopped scallions on top. Enjoy!
