It’s that time of year when it’s starting to get warm and the last thing anyone wants to do is be stuck in a hot kitchen! I’ve picked out a delicious & refreshing dessert that requires minimal oven time that everyone is sure to enjoy.
We’re going to be making a fruit pizza today. Yes, I’m totally cheating on the crust and yes, it’s OK! If you really want to take the the time to make homemade sugar cookie dough then by all means, have at it. The best part about fruit pizza is that you can use whatever kind of fruit you’d like! Also, to add a little flavor, drizzle some dark chocolate on top. Enjoy π
Fruit Pizza
Ingredients:
- 1 package sugar cookie dough mix
- 8oz cream cheese, softened
- 2/3 cup powdered sugar
- 2 tsp vanilla extract
- 3-4 tbs heavy whipping cream or whole milk
- Assorted fresh fruits, washed & cut
Directions:
Crust
- Prepare sugar cookie dough mix per the directions on the package. Depending on the size of pan you’re using, separate the dough to the amount needed and roll out to about 1/4 inch thickness. Bake as instructed and let cool for 20 minutes or place in the fridge for 5 minutes.
**Quick Tip: When rolling out cookie dough, use powdered sugar instead of flour. This helps keep the dough sweet & moist instead of dried out and pasty. In order to keep it from sticking to the counter, place a sheet of parchment paper or wax paper underneath.**
- In a large mixer add cream cheese, powdered sugar, vanilla extract and heavy whipping cream or whole milk. If you want to add a little flair, place a few drops of food coloring into the mix!
- Start the mixer on low and slowly increase the speed until the mixture is smooth.
- Now that your crust has cooled, spread an even amount of frosting over the surface making sure to cover all areas.
- Time for the fruit! Place your fruit on top in fun patterns. Serve immediately or cover & refrigerate for later.
